anyone ever have a problem with camtasia where you click "record" and the whole screen flickers once, then it quickly counts down 3,2,1 but doesn't start recording? I finally found the motivation to sit down and make a video last night and this happens.....

I haven't updated the guide. What do you have questions/problems with?

Never heard of this, I would update your video drivers and try again. If you continue to have issues PM your AIM or Skype and I will take a look at the issue on your end.

I made a video and saved it as an .AVI file, but it turns out to be 800 MB

So I read the guide and it says to open the file and click "Produce video as.." in the task list. However, I cannot select that option. I guess it's because I already rendered the file?

Not really sure how to proceed now.

Make sure to add the video to the time line before you try to produce it. If the video isn't in the time line "Produce video as" will be grayed out.
