Is it worth 3-betting AJ against this player since even when this flop comes I feel like I only get two streets of value at best? Do you make up for it for the times you take it down pre and the times he folds to the c-bet on other boards?
I think we can fold AK versus this guy in this spot although it would be much harder. It really depends on how wide he is calling 3bets. I think the wider he calls 3bets the more likely we should be to fold since he will have 55 and ATo in his range.
I don't have much experience using pokerstove but here is a rough one I just did. I included half the combos of AK (b/c I assume he 4bets some of the time) and half the combos of ATo since I have no idea if he calls with it pre. I also put 55 in here which again, I have no idea if he calls pre with it.

It really depends on preflop stats, but against almost all villains I think it is ok to 3bet here. I think flatting vs most villains is fine too. An ideal spot to 3bet this is if villain is calling a lot of 3bets and not 4betting too often. This means he will be flatting with worse Axs and Jx hands and you don't have to worry about being blown off your hand from him 4betting. Another good spot to 3bet would be if villain is just folding to a very high % of 3bets. Then we just take the pot down pre so often that it becomes directly profitable to just 3bet him here. Also, winning 3.5bb in this spot with AJo is a big win.
I play the same stakes and see people playing AQ like this quite often actually. I would go so far to say that its his most likely hand here!
Other than that, I agree with everything you said.
